BBQ Pulled Brisket Chilli
A proper bowl of chilli, built around brisket that's already done the hard work in the smoker.
Ingredients
- —500g Symi's BBQ Pulled Brisket
- —1 onion, diced
- —2 garlic cloves, crushed
- —1 red pepper, diced
- —1 tsp ground cumin
- —1 tsp smoked paprika
- —1/2 tsp chilli flakes
- —400g tin kidney beans, drained
- —400g tin chopped tomatoes
- —150ml beef stock
- —Olive oil
- —200g cornbread mix
- —1 egg
- —150ml milk
- —Soured cream and spring onion, to serve
Method
- 1.
Heat the brisket according to pack instructions, then shred and set aside with any juices.
- 2.
Heat the oven to the temperature on your cornbread mix packet.
- 3.
In a large pan, heat olive oil and soften the onion, garlic and red pepper for 6-8 minutes.
- 4.
Stir in the cumin, paprika and chilli flakes, then add the kidney beans, chopped tomatoes and stock. Simmer for 15 minutes.
- 5.
Stir the shredded brisket into the chilli and simmer for a further 5 minutes. Season to taste.
- 6.
Make up the cornbread mix with the egg and milk, pour into a small baking dish and bake according to packet timings.
- 7.
Serve the chilli with a wedge of cornbread, soured cream and spring onion.
